Παξιμάδια αμυγδάλου / Almond biscotti


Το ψωμί ψωμάκι λοιπόν… 
Στο δρόμο για το Συνεβρό τις προάλλες πεινάσαμε λιγάκι… Φτάνοντας στην Ακράτα είπαμε να πάρουμε κανένα ψωμάκι, καμιά τυροπιτούλα κάτι να μας κόψει λίγο μέχρι να ανέβουμε στο χωριό γιατί εκεί κανονίζαμε να φτιάξουμε κρεατόσουπα στη σόμπα και άλλα τέτοια ιδανικά και όμορφα… 

Μια προηγούμενη φορά που βρεθήκαμε εκεί είχαμε βρει ένα φούρνο ακριβώς στη διασταύρωση ο οποίος όμως δεν μας εντυπωσίασε. Μια χαρά πράγματα είχε δηλαδή αλλά σαν και αυτά που μπορεί να βρει κανείς σε οποιοδήποτε φούρνο στην Αθήνα… Μας είχαν μιλήσει για ένα άλλο φούρνο όμως λίγο πιο κάτω, το φούρνο του Χρύσανθου και είπαμε να πάμε κατά κει… Και τον βρήκαμε και πήραμε και ψωμί, και ωραίες τυρόπιτες με χωριάτικο φύλλο και κάτι ωραία παξιμάδια γλυκά με αμύγδαλο… Και τα φάγαμε.. τα παξιμάδια. Γιατί ήταν τόσο ωραία που και το ψωμί και τις τυρόπιτες τα αφήσαμε στο πλάι.. Θυμόμουν λοιπόν ότι κάπου είχα δει μια συνταγή ωραία για μπισκότι αμυγδάλου.. Τη βρήκα., την ετοίμασα και θα την μοιραστώ μαζί σας… 

Το όνομα Μπισκότι είναι Ιταλικό και είναι ο πληθυντικός της λέξης Μπισκότο που σημαίνει κάτι που το διπλοφουρνίζω. Οπότε όπως καταλαβαίνουμε είναι λάθος να λέμε τα μπισκότα μπισκότα μιας και έτσι εννοούμε στην ουσία παξιμάδια… Που δεν είναι…  Καταλάβατε; :-) 

Αρχαίοτατος τρόπος συντήρησης τροφίμων το διλπλοφούρνισμα, με τον Πλίνιο να καυχιέται ότι τέτοια φαγητά θα ζουν για αιώνες… Πάντως τέτοιου είδους μπισκότα είχαν και οι Ρωμαίοι λεγεωνάριοι και γενικά ότι καλύτερο για μεγάλα ταξίδια… 

Λοιπόν! πάμε για τα παξιμάδια!

Υλικά:
  • 3 1/4 κούπες αλεύρι για όλες τις χρήσεις 
  • 1 κουταλιά της σούπας μπέικιν
  • 1/3 κ.γλ. αλάτι
  • 1 1/2 κούπες ζάχαρη
  • 10 κουταλιές της σούπας βούτυρο γάλακτος λυωμένο
  • 3 μεγάλα αυγά
  • 1 κουταλιά της σούπας εκχύλισμα βανίλιας
  • 2 κουταλιές του γλυκού γλυκάνισο τριμμένο
  • 1 κούπα ολόκληρα (με τη φλούδα) αμύγδαλα καβουρδισμένα και σπασμένα σε κομματια

  • 1 ασπράδι αυγού χτυπημένο.

Εκτέλεση:
Προθερμένουμε το φούρνο στους 180 βαθμούς.
Περνάμε από κόσκινο το αλεύρι, το αλάτι και το μπέικιν.. Ανακατεύουμε τη ζάχαρη στο βούτυρο και προσθέτουμε τα αυγά.. Προσθέτουμε τα μυρωδικά (γλυκάνισο. βανίλια) και ανακατεύουμε. Με ξύλινο κουτάλι ή σε χαμηλή ταχύτητα στο μίξερ προσθέτουμε το αλεύρι να ενσωματωθεί στο μείγμα. Τέλος προσθέτουμε τα αμύγδαλα. 
Η ζύμη είναι μαλακή. Με αλευρωμένα χέρια τη χωρίζουμε σε δύο κομμάτια και πλάθουμε δύο καρβελάκια. Τα μεταφέρουμε σε ταψί που έχουμε καλύψει με αντικολλητικό χαρτί. αλείφουμε με το αυγό.. 

Ψήνουμε στο φούρνο στη μεσαία σχάρα για 30 λεπτά μέχρι να ροδίσουν. Καλό θα είναι να έχουμε σε απόσταση τα δύο καρβελάκια γιατί κατά το ψήσιμο απλώνουν. Τα βγάζουμε από το φούρνο και τα αφήνουμε να κρυώσουν για κανένα μισάωρο. Με οδοντωτό μαχαίρι ψωμιού κόβουμε φέτες που τις απλώνουμε στο ίδιο ταψί και τα βάζουμε ξανά στο φούρνο για 12 λεπτά από τη μια και 8 από την άλλη γυρνώντας τα ενδιάμεσα μέχρι να πάρουν χρώμα.. Τα μεταφέρουμε σε σχάρα, τα κρυώνουμε και τα βάζουμε σε ένα μπωλ που να κλείνει. Διατηρούνται άνετα μια εβδομάδα που σιγά μην σας κρατήσουν τόσο! :-)

Lately we have been traveling a lot to Peloponisos as you probably know. We go to a small village called Synevro 18 km from the seaside town Acrata a total of 200km from Athens. 
As we drove in Acrata we realized that we were rather hungry and so we decided to go to a bakery and get some bread or cheese pie to eat till we get to the village in the mountain where we'd prepare a soup and other magical things.. Anyway.. last time there we found a bakery just on the crossroad but we did not find anything too exciting to try. 
A friend had told us about another bakery a bit down the like called Chrysantho's. Decided to give it a try. Found it and bought some wonderful bread, cheese pies and we also got some almond biscotti.. 
As we started our climb we were so very impressed with the biscotti and left the bread and the rest onto the side.. Nice and crunchy with the aroma of almond coming through.. Had to give them a try. Remembered a recipe i had seen a few years back and when we got back home i found it in my list of to do recipes and gave it a try.. They came up great and thought to share it with you… 

  • 3 1/4 cups all purpose flour
  • 1 tablespoon baking powder
  • 1/3 teaspoon salt
  • 1 1/2 cups sugar
  • 10 tablespoons (1 1/4 sticks) unsalted butter, melted
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 2 teaspoons aniseed, ground, or you can use other sources of aroma like orange zest or lemon zest for instance
  • 1 cup whole almonds, toasted, coarsely chopped

  • 1 large egg white

Position rack in center of oven and preheat to 350°F. Line baking sheet with parchment paper. Sift flour, baking powder and salt into medium bowl. Mix sugar, melted butter, 3 eggs, vanilla extract and ground aniseed in large bowl. Add flour mixture to egg mixture and stir with wooden spoon until well blended. Mix in almonds.
Divide dough in half. Using floured hands, shape each dough half into 13 1/2-inch-long, 2 1/2-inch-wide log. Transfer both logs to prepared baking sheet, spacing apart. Whisk egg white in small bowl until foamy; brush over top and sides of each dough log.
Bake logs until golden brown (logs will spread), about 30 minutes. Cool logs completely on sheet on rack, about 25 minutes. Maintain oven temperature.
Transfer logs to work surface; discard parchment paper. Using serrated knife, cut logs on diagonal into 1/2-inch-wide slices. Arrange slices, cut side down, on same baking sheet. Bake 12 minutes. Turn biscotti over; bake until just beginning to color, about 8 minutes. Transfer to rack and cool. (Can be prepared 1 week ahead. Store in airtight container at room temperature.)

Frozen cookies.. an idea...

When i was a kid and  watched these American tv shows with the great families that all lived together in harmony and mothers or grandmothers baking cookies for the children to have together with a cup of milk when ever they got back from school, i was wondering how on earth they made it. I mean, how did they have the time to bake and make cookies from scratch almost daily.. I remember thinking that one day it would happen here as well… The smell of cookies fresh from the over warming your hands and mouth after returning home from a rainy and bleak day at school… 

A few months ago though from something i read i finally realized that those mothers and grandmothers do not bother to make dough and bake cookies every day! NO, far from it… what they would do would be to get the frozen dough from the freezer that is formed into a roll and cut a few slices that they would then bake in the over right from the freezer! 

What a great idea i thought! easy to do, home made cookies that you make once, then freeze and then use fresh… 

Since then i tried a few recipes that turned out just great but a bit too much for the greek palate. All this butter and chocolate chips and candy bars etc… The butter obviously helps the cookies being cut more easily right out of the freezer but still wanted to see if i could have the same result with a typical greek cookie. 

And what more typical cookie here than the "ladokoulouro".. A cookie with no butter, no eggs, so it is great for the fasting periods but also very tasty with cinnamon and orange zest and in the background the warming taste of olive oil.. Love making it but always found that after a week it has lost it's freshness… So, i wonder how it would be if i froze the dough and bake the cookies in batches. Would it be ok in the freezer for a week or two? Did some experiments and found out that it pretty much can. Ofcourse since it has no butter so it freezes more solidly that the butter cookies it is not so easy to slice with a knife but a few hours out of the freezer will take care of that and cookies will come out smelling like heaven… 

One thing to keep in mind with this recipe is that the most important here is the olive oil. And i am talking about taste here. You need a fruity and nice oil with character, not a blunt one. 

Ingredients:
2 cups of olive oil 
1 cup of fresh orange juice and the zest of two of the oranges ποτηρια ζαχαρη
1 espresso cup of cognac 
2 cups of sugar
1 tsp baking soda
2 tsp baking powder
1 tsp cinammon 
sesame seeds for garnish
General purpose flour (about 1,2 kilos) 
















In the mixer bowl add the oil and sugar and beat till it is nice and frothy. 

Add the soda and baking powder in the orange juice, stir and add the mixture that will bubble and expand in the mixer bowl. Add the orange zest, cinnamon and cognac. Slowly stir in the flour and make a soft dough that can be made into cookies. 

Separate the dough in three pieces. Put the two into bags and keep in the freezer. The one that remains make it into cookies, cover with sesame and bake in 180 celcious for about 20-25 minutes till the cookies are nice and brown…
